Why These Vegan Cornbread Waffles Are a Must-Try

These homemade cornbread waffles aren’t just a meal; they’re an experience that will make any gathering or quiet morning truly special. Here’s what sets them apart and makes them so utterly irresistible:

  • An Exquisite Balance of Flavors. It’s almost as if cornbread was destined to be transformed into waffles. Do you enjoy a drizzle of maple syrup on your classic cornbread? You’ll find that the same sweet addition perfectly complements these spicy jalapeño cornbread waffles. This “sweet heat” combination is simply divine, creating an addictive taste sensation that will have you reaching for more. The inclusion of fresh rosemary and slow-roasted garlic introduces an incredible depth and aromatic complexity, elevating the flavor beyond what you might expect from a typical waffle.
  • Perfectly Crispy with a Fluffy Interior. Achieving the ideal waffle texture is an art, and this recipe masters it. These savory cornbread waffles boast an enviable crispness on the outside, forming a golden-brown shell that gives way to the most wonderfully fluffy, tender, and moist interior. This delightful textural contrast ensures every bite is a pleasure, offering a satisfying crunch followed by a soft, melt-in-your-mouth experience.
  • Excellent for Meal Prepping and Freezing. Waffles are a true superstar when it comes to convenient meal prep. They’re incredibly easy to make in advance, cool, and stash in the freezer, providing a quick and delicious option for busy weekday breakfasts or spontaneous savory cravings. Simply reheat them for a fresh-tasting meal in minutes, making them a fantastic solution for staying nourished and happy without the morning rush.
  • Wholesome and Vegan-Friendly. Crafted entirely from plant-based ingredients, these waffles are perfect for anyone following a vegan diet or looking to incorporate more plant-based meals into their lifestyle. They prove that vegan cooking can be just as, if not more, flavorful and satisfying than traditional recipes, offering a wholesome and delicious option for everyone.

Essential Ingredients for Your Savory Waffles

Many of the ingredients for these delicious waffles are likely already in your pantry! Understanding the role of each component will help you achieve the best results. For precise ingredient quantities and detailed recipe instructions, please scroll down to the full recipe card below.

  • Soy Milk – This forms the base of our vegan buttermilk. While soy milk provides a rich texture, you can also use another unsweetened, unflavored non-dairy milk such as almond or oat milk, ensuring it’s thick enough to curdle effectively.
  • Apple Cider Vinegar – Essential for creating a homemade vegan buttermilk when combined with soy milk. The acidity reacts with the baking soda to give the waffles their light, fluffy texture. White vinegar or fresh lemon juice also work perfectly as substitutes.
  • Fine Grain Cornmeal – This is a crucial element for the signature cornbread texture. Opting for fine grain cornmeal is vital; coarser varieties can result in a gritty, less pleasant texture in your waffles. It ensures a smooth yet distinct corn flavor.
  • All-Purpose Flour – Provides structure and tenderness to the waffles. If you need a gluten-free option, a good quality 1:1 gluten-free flour blend will work just as well, ensuring your waffles are accessible to everyone.
  • Baking Soda & Baking Powder – These leavening agents work in tandem to give your waffles their impressive rise and airy interior. The baking soda reacts with the acidic vegan buttermilk, while baking powder provides an additional lift, guaranteeing fluffy results.
  • Sea Salt – A pinch of sea salt is critical for enhancing all the other flavors, balancing the sweetness, and making the savory notes pop.
  • Fresh Rosemary – Fresh herbs make a significant difference! Chopped fresh rosemary adds a wonderful aromatic, slightly piney flavor that pairs beautifully with the garlic and jalapeño. While dried rosemary can be used in a pinch, fresh offers a much more vibrant and nuanced taste.
  • Vegan Egg Substitute – Acts as a binder, helping to hold the waffles together and contributing to their moist texture. You can use various vegan egg substitutes like a flax egg, chia egg, or a commercial egg replacer, according to package instructions.
  • Vegan Butter – My homemade vegan butter is my personal favorite for its rich flavor, but any good quality store-bought vegan butter will work perfectly to add moisture and a delicious buttery taste.
  • Roasted Garlic – This is where a lot of the magic happens! Roasted garlic offers a deep, mellow, and slightly sweet flavor that is far more complex and less pungent than raw garlic. You can easily make traditional roasted garlic in the oven or speed up the process with air fryer roasted garlic. Creaming it with a fork ensures it disperses evenly throughout the batter.
  • Jalapeño – The star of the “heat” component! Finely chopped and deseeded jalapeño adds a vibrant kick without overwhelming the other flavors. You can easily adjust the quantity of jalapeño to suit your preferred heat level, from a mild warmth to a more pronounced spice.

Step-by-Step Guide to Crafting Vegan Cornbread Waffles

Making these delicious vegan cornbread waffles is straightforward and rewarding. Follow these steps for perfect results every time:

Vegan buttermilk in bowl with whisk
Make the vegan buttermilk.

Whisk the dry ingredients.
  • Step 1: Prepare the Vegan Buttermilk. In a medium-sized bowl, combine the soy milk and vinegar. Give it a quick whisk and then let the mixture sit undisturbed for about 3-5 minutes. During this time, the milk will curdle slightly and thicken, creating a rich, tangy vegan buttermilk that is essential for moist and tender waffles.
  • Step 2: Combine the Dry Ingredients. In a separate large mixing bowl, whisk together the fine grain cornmeal, all-purpose flour (or gluten-free blend), baking soda, baking powder, sea salt, and the freshly chopped rosemary. Ensure all ingredients are well combined and there are no clumps, which helps in even leavening. Set this bowl aside.

Combine wet and dry, then fold in jalapeños.
  • Step 3: Mix the Wet Ingredients. Into the bowl containing your freshly made vegan buttermilk, whisk in the vegan egg substitute, the melted vegan butter, and the creamed roasted garlic. Mix until everything is thoroughly combined and smooth.
  • Step 4: Finish the Batter. Pour the wet ingredient mixture into the large bowl with the dry ingredients. Mix gently until just combined. Be careful not to overmix; a few lumps are perfectly fine and often lead to a more tender waffle. Finally, fold in the chopped and deseeded jalapeño, distributing it evenly throughout the batter.

  • Step 5: Prepare the Waffle Iron. Preheat your waffle iron to your desired setting. I personally recommend setting it a couple of dials before maximum heat, as this allows for beautifully crisp edges and a perfectly fluffy interior. Once preheated, lightly coat the iron with nonstick spray or brush with a little vegan butter, according to the manufacturer’s instructions.
  • Step 6: Cook the Waffles. Using a wooden spoon or a ladle, scoop a generous amount of batter into the center of the preheated and greased waffle maker. Close the lid and allow the waffle to cook undisturbed until the steam completely stops rising from the iron. This indicates that your waffle is fully cooked and perfectly crisp. Resist the urge to open it too soon! Once cooked, carefully remove each waffle and place it on a baking sheet in a 200°F (95°C) oven set to “warm” to maintain its crispness and temperature while you cook the remaining batter.

Expert Tips & Creative Variations for Your Waffles

To ensure your cornbread waffles are always perfect and to inspire new ways to enjoy them, here are some additional pointers and creative ideas:

  • Keep Waffles Warm and Crispy. If you’re cooking multiple batches and want to keep earlier waffles warm and prevent them from becoming soggy, simply place them on a wire cooling rack set over a baking sheet. Transfer this to an oven preheated to 200ºF (95°C). The wire rack allows air to circulate, maintaining their crispiness.
  • Preventing Soggy Waffles During Meal Prep. For meal prepping, it’s essential to let your waffles cool completely on a wire cooling rack before storing them. This allows any residual steam to escape, preventing them from becoming soggy. Once fully cooled, they are ready for freezing or refrigeration.
  • Experiment with Herbs. While rosemary offers a classic savory flavor, don’t hesitate to get creative with other herbs. Fresh cilantro would make an excellent swap, especially if you’re leaning into a more Southwestern flavor profile. Minced chives offer a milder, oniony note, while a touch of fresh thyme or oregano could also be delicious.
  • Make Them Cheesy. For an extra layer of savory indulgence, fold a handful of shredded vegan cheddar cheese into the batter along with the jalapeños. The cheese will melt beautifully, adding a gooey texture and a rich, tangy flavor that complements the spice perfectly.
  • Add a Pop of Sweetness. For a delightful contrast, consider folding in a handful of fresh or frozen (not thawed) corn kernels into the batter. They add a burst of natural sweetness and an appealing texture that enhances the cornbread experience.
  • Boost the Heat (or Mildness). If you love a serious kick, leave some of the jalapeño seeds in, or add a pinch of cayenne pepper to the dry ingredients. For a milder flavor, use less jalapeño or opt for a milder chili like poblano pepper (deseeded and finely diced).
  • Incorporate Vegan “Bacon” Bits. For an even more hearty and savory waffle, stir in some crispy vegan bacon bits or crumbled smoked tofu into the batter before cooking. This adds a fantastic smoky depth and satisfying chew.

Delicious Serving Ideas for Your Cornbread Waffles

These savory cornbread waffles are incredibly versatile and can be paired with a wide array of toppings, whether you’re aiming for a breakfast, brunch, or dinner spread. Here are some fantastic serving suggestions to inspire your next meal:

  • My Go-To Savory Toppings: I personally love serving these waffles with a vibrant combination of roasted tomatoes (sautéed until blistered in a cast iron skillet with a touch of coconut oil), creamy sliced avocados, and a sprinkle of fresh chopped scallions. The sweetness of roasted tomatoes, the richness of avocado, and the subtle oniony bite of scallions create a perfect harmony of flavors.
  • A Touch of Sweet Heat: Don’t forget the maple syrup! A generous drizzle of pure maple syrup over these savory waffles creates an unbelievably delicious sweet and spicy contrast that highlights all the flavors.
  • Classic Tex-Mex Inspired: Elevate your waffles by adding a dollop of homemade Restaurant-Style Blender Salsa, a generous scoop of tangy Vegan Sour Cream, and a side of crispy Tofu Bacon. This combination transforms them into a hearty and satisfying Tex-Mex brunch or dinner.
  • Fresh & Zesty: A squeeze of fresh lime juice over sliced avocado and a sprinkle of fresh cilantro can add a bright, zesty finish that perfectly complements the jalapeño.
  • Hearty Brunch Platter: For a full brunch experience, serve these waffles alongside a vegan tofu scramble, some roasted sweet potatoes, and a fresh fruit salad.
  • Dinner Revolution: Use these waffles as a base for a unique savory dinner. Top them with a black bean chili, a dollop of guacamole, and some pickled red onions for a truly memorable meal.

Storage and Reheating Instructions for Waffles

These waffles are fantastic for meal prep! Here’s how to properly store and reheat them to enjoy deliciousness all week long:

  • Refrigerator Storage: Once your cornbread waffles have completely cooled, transfer them to an airtight container. They will stay fresh and delicious in the refrigerator for up to 4 days, ready for a quick breakfast or snack.
  • Freezer Storage: For longer storage, freeze these waffles by first arranging them in a single layer on a baking sheet until they are solid (this prevents them from sticking together). Once frozen, transfer them to a freezer-safe bag or airtight container. They can be stored in the freezer for up to 3 months, making them perfect for grabbing whenever a craving strikes.
  • Reheating for Best Results: For optimal crispness, reheat frozen or refrigerated waffles in a 400ºF (200°C) oven or a toaster until heated through and crispy. While the microwave can also warm them up, they won’t retain their desirable crisp texture.

Ingredients

  • 1 ¼ cups soy milk, or other non dairy milk, 300mL
  • 2 teaspoons apple cider vinegar or white vinegar, or lemon juice, 10mL
  • 1 ¼ cups fine grain cornmeal, 150g
  • 1 cup all purpose gluten free flour mix, 148g
  • ½ teaspoon baking soda, 2g
  • 1 ½ teaspoons baking powder, 6g
  • ¾ teaspoon sea salt, 4g
  • 2 teaspoons freshly chopped rosemary, 2g
  • 1 vegan egg substitute
  • ¼ cup melted vegan butter, 44g
  • 4 cloves roasted garlic, creamed with a fork
  • 1 jalapeño, chopped and de-seeded

Instructions

  • In a medium bowl, mix the nondairy milk and apple cider vinegar together. Let this mixture sit for at least 3 minutes to allow it to curdle and create a rich vegan buttermilk.
  • In a large bowl, thoroughly mix together the fine grain cornmeal, all-purpose flour (or gluten-free mix), baking soda, baking powder, sea salt, and the freshly chopped rosemary. Ensure all dry ingredients are well combined. Set this bowl aside.
  • Return to the bowl containing the vegan buttermilk. Whisk in the vegan egg substitute, the melted vegan butter, and the creamed roasted garlic until the mixture is smooth and fully incorporated.
  • Pour the combined wet ingredients into the large bowl with the dry ingredients. Mix gently with a spoon or spatula until just combined. Be careful not to overmix; a few small lumps are fine.
  • Add in the finely diced and deseeded jalapeños. Gently fold them into the batter to distribute evenly.
  • While preparing the batter, preheat your waffle iron according to the manufacturer’s instructions. For crisp waffles with a fluffy interior, I recommend setting mine two dials before maximum heat. Grease the waffle iron generously with nonstick spray or vegan butter.
  • Using a wooden spoon or ladle, scoop a suitable amount of batter into the middle of the greased, preheated waffle maker. Close the lid and allow the waffle to cook undisturbed until the steam has completely finished rising from the waffle maker. It’s crucial not to open the iron before the steam stops, as this ensures a perfectly cooked and crispy waffle. Carefully remove each cooked waffle and place it on a wire rack set over a baking sheet in a warm oven (around 200°F or 95°C) to keep it warm and crispy while you cook the remaining batter.
  • Serve your freshly made waffles immediately with your favorite toppings! My preferred combination includes roasted tomatoes (which I quickly sauté in some coconut oil in a cast iron skillet), creamy sliced avocados, a sprinkle of fresh chopped scallions, and a delightful drizzle of maple syrup on top. Enjoy every savory, sweet, and spicy bite!
