  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup raw brown sugar
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 flax egg, or other egg replacement for vegan option
  • 1/2 cup unsweetened almond milk, or other non-dairy milk
  • 3 tablespoons vegan butter, melted
  • 1 teaspoon vinegar
  • 1/2 tsp vanilla extract

Glaze:

  • 2 tablespoons coconut milk, NOT cream (use full-fat canned coconut milk for best results, stir well)
  • 1/2 cup non-dairy chocolate chips
  • 1-2 tsp maple syrup, optional – adjust to your desired sweetness

S’mores toppings:

  • Enough vegan marshmallows for each donut, I highly recommend Dandies marshmallows for their excellent texture
  • Crushed graham crackers, ensure they are vegan and gluten-free if needed

Instructions

  • Preheat your oven to 350°F (175°C).
  • Lightly spray a donut pan with non-stick cooking spray and set it aside.
  • In a small bowl, combine the almond milk and vinegar. Let it sit for about two minutes until it begins to curdle. This creates a homemade “buttermilk” effect, which adds tenderness to the donuts.
