Being fully immersed in the Christmas spirit means indulging in all the wonderful traditions that make this time of year so magical. From decorating the tree with twinkling lights and cherished ornaments to carefully selecting and wrapping gifts, every activity adds to the festive atmosphere. This year, my home is a hub of holiday activity – the Christmas tree is proudly standing tall, adorned with lights, and a gentle glow permeates every room. It’s a truly enchanting scene, mirroring the excitement building up to Christmas day. And what better way to fuel this joyous hustle than with delicious, heartwarming food? Speaking of holiday delights, I’ve been on an eggnog spree, having already made not one, not two, but four batches of homemade eggnog for my family this past weekend alone – and yes, it’s all gone! There must be an unspoken eggnog competition happening in our household, because if there were, we’d definitely be champions.

Naturally, with so much eggnog on hand, creating this Eggnog French Toast the very next morning was an absolute must. The moment the French toast started cooking, a comforting fragrance of eggnog mingled with warm cinnamon wafted through the house, creating an irresistible pull towards the kitchen. It’s the kind of aroma that transcends walls, drawing anyone near or far to investigate the source of such deliciousness. While I typically stick to my tried-and-true eggnog recipe, this time, I made a significant and rather revolutionary change that completely transformed the experience: I used Silk Cashewmilk instead of traditional dairy milk. I was genuinely thrilled and even a bit shocked by the magnificent results! As a loyal fan who drinks Silk Almondmilk almost daily, the opportunity to share my review of Silk’s Cashewmilk was incredibly exciting. It’s a brand I trust and deeply believe in, and my consistent preference for non-dairy milks is well-documented across many of my recipes and posts.

The qualities of Silk Cashewmilk are truly impressive. It’s wonderfully creamy, in fact, I found it to be even creamier than regular dairy milk, which contributes to a smoother, richer texture in recipes. And the taste? Absolutely amazing. As someone who also pays close attention to nutritional facts, I was delighted to discover that Silk Cashewmilk boasts 50% more calcium than dairy milk, making it an excellent choice for those looking to boost their calcium intake. This fact alone makes it a compelling alternative worth considering. I remember pouring myself a glass, taking a sip, and thinking, “Oh wait, this tastes really great!” It was so good that I almost poured a second glass before reminding myself, “Jessica, this is for the eggnog!” Thankfully, I managed to save enough for the recipe, and the result in the eggnog was nothing short of spectacular. No further explanation needed – it truly elevated the flavor profile and luxuriousness of the eggnog.

My family’s reaction to the eggnog made with Silk Cashewmilk was overwhelmingly positive. They raved about how much they loved it, commenting that it was significantly better than the batch I had previously made with dairy milk. Personally, I found the cashew milk eggnog to be much smoother, a quality that translated beautifully into the batter for the French toast. And oh, let’s talk about the French toast itself! This was no ordinary breakfast; it was the epitome of perfectly executed French toast. Each slice achieved that ideal balance: a wonderfully crisp exterior that yields to a deliciously soft yet sturdy interior. The subtle, yet distinctly pronounced, eggnog flavor permeated every bite without being overpowering, creating a harmonious blend of holiday spices. Drizzled with a generous amount of maple syrup and perhaps a dollop of vegan whipped cream, it transforms into an even more divine culinary experience. This delightful breakfast became an instant hit, setting a new standard for our holiday mornings.

It goes without saying that my supply of Silk Cashewmilk quickly vanished, and I’ll absolutely be stocking up on more. If you’re looking to infuse your holiday season with a touch of magic and a delicious, dairy-free twist, I highly encourage you to try this Eggnog French Toast using Silk Cashewmilk. Ingredients

For the Custard:

  • cup soaked cashews, 45g – ensure they are well-soaked for a creamy blend.
  • 1 ½ cups vegan milk, such as almond, oat, or soy – 360mL (Silk Cashewmilk recommended for extra creaminess!)
  • 1 tablespoon flax meal, 7g – this acts as your egg replacer and thickener.
  • 3 tablespoons maple syrup, 45mL – adjust to your desired sweetness.
  • 1 teaspoon vanilla extract, 5mL – essential for that classic French toast flavor.
  • ½ teaspoon ground cinnamon, 1.5g – for that warm, festive spice.
  • ¼ teaspoon ground nutmeg, 0.5g – complements the eggnog perfectly.
  • ¼ teaspoon sea salt, 1.5g – to balance and enhance flavors.
  • 1 tablespoon brandy, bourbon, or whiskey – 15mL (optional, for authentic eggnog flavor)

For Cooking:

  • 2 tablespoons vegan butter or oil, 30g – for cooking the French toast to a golden crisp.
  • 6 thick slices vegan sandwich bread, 300g – a sturdy bread works best.

For Serving:

  • Maple syrup, to generously drizzle.
  • Extra cinnamon, for sprinkling – adds a lovely aromatic finish.
  • Vegan whipped cream, for a decadent topping.

Instructions

  • To prepare your rich eggnog custard, combine the soaked cashews, your chosen vegan milk (preferably Silk Cashewmilk for optimal creaminess), flax meal, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, sea salt, and the optional brandy (or bourbon/whiskey) into a high-speed blender. Process on high speed until the mixture is completely smooth and wonderfully creamy, with no grit from the cashews.
  • Once blended, pour the luxurious custard into a shallow dish, such as a pie plate or a large baking dish. Cover the dish and transfer it to the refrigerator to chill for at least 15 minutes. This crucial step allows the flax meal to work its magic, thickening the custard slightly, which helps it adhere beautifully to the bread for a perfect coating.
  • While the custard chills, heat a large skillet or griddle over medium heat. Once hot, melt 1 tablespoon of vegan butter or oil evenly across the cooking surface. Retrieve your chilled custard. Dip each thick slice of vegan sandwich bread into the custard, ensuring both sides are fully coated. Allow each side to soak for approximately 10–15 seconds, then lift the bread and let any excess custard drip off back into the dish to prevent sogginess.
  • Carefully place the custard-soaked bread slices onto the hot skillet. Cook for 3–4 minutes per side, or until each piece is beautifully golden brown and has developed crisp edges. This ensures a delightful contrast in texture. As you cook in batches, add the remaining vegan butter or oil as needed to maintain a non-stick surface and achieve that perfect golden hue.
  • Once cooked, transfer the warm French toast slices onto individual plates, ready for serving. Elevate your festive breakfast by drizzling generously with maple syrup, sprinkling a little extra ground cinnamon for added aroma and spice, and topping with a dollop of vegan whipped cream for an extra touch of indulgence. Serve immediately and enjoy the holiday cheer!

Notes

  • Refrigerator: Should you have any delightful leftovers, transfer the cooled Eggnog French Toast to an airtight container and store in the refrigerator for up to 3 to 4 days. They taste just as good the next morning!
  • Freezer: For longer storage, arrange the cooked French toast slices in a single layer on a parchment-lined baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe bag or an airtight container, where they can be kept for up to a month.
  • To reheat: Reheat leftovers in a toaster oven or in a skillet over medium heat until warmed through and crispy. This method helps retain their texture better than a microwave.
