Essential Notes on the Ingredients for Perfect Roasted Potatoes
To create the most mouthwatering garlic roasted potatoes, choosing the right ingredients and preparing them correctly is key. While the full quantities are available in the recipe card below, here are some important details to consider for each component:
- Potatoes: For the best results in terms of crispiness and fluffy interiors, I highly recommend using russet or Yukon gold potatoes. Russets are known for their starchy texture, which becomes incredibly fluffy when roasted, while Yukon golds offer a naturally buttery flavor and creamy consistency. There’s no need to peel the skins! Leaving them on not only adds extra nutrients and fiber but also contributes significantly to that desirable crispy exterior. Just be sure to scrub them thoroughly under cold water to remove any dirt and pat them completely dry before cutting, as excess moisture is the enemy of crispiness.
- Garlic: Given that these are *garlic* roasted potatoes, this ingredient is paramount! To prevent the garlic from burning and becoming bitter during the roasting process, it’s crucial to chop your garlic cloves into larger pieces. Think rustic, chunky bits rather than finely minced. This allows them to soften and caramelize beautifully alongside the potatoes without scorching. A slight crispiness on the garlic pieces is perfectly fine and even desirable – it adds another layer of texture and intensified flavor that is simply incredible.
- Vegan Butter & Olive Oil: The combination of these two fats is a secret weapon for incredible flavor and texture. While you can certainly use any oil you prefer, such as avocado or grapeseed, I strongly encourage incorporating the vegan butter. The butter adds an unparalleled richness and a delightful, savory depth that elevates the overall taste profile, mimicking traditional butter wonderfully. The olive oil helps distribute the heat evenly and promotes crispiness, while the butter infuses a luxurious, comforting flavor that makes these potatoes truly special.
- Thyme: Fresh herbs make an immense difference in roasted dishes. Fresh thyme, with its subtle, earthy, and slightly peppery notes, truly makes these garlicky roasted potatoes pop. Its delicate leaves beautifully adhere to the potatoes, releasing their aromatic oils as they roast. If fresh thyme isn’t available, or if you’re looking to experiment, fresh rosemary would also be an absolutely delicious alternative, offering a more robust, piney aroma. For a burst of fresh green color and a bright, herbaceous finish, consider adding freshly chopped parsley after the potatoes are done cooking, just before serving.
- Salt and Pepper: Essential seasonings for bringing out the natural flavors of the potatoes and garlic. Use sea salt for its clean taste and freshly ground black pepper for maximum aroma. Don’t be shy with the seasoning; potatoes can absorb a fair amount!
How to Master Making Crispy Garlic Roasted Potatoes
Making these delicious garlic roasted potatoes is surprisingly simple and requires just a few key steps. Follow these instructions for a perfect batch every time.

- Preheat Your Oven: Begin by preheating your oven to 450°F (230°C). A hot oven is crucial for achieving that desirable crisp exterior on the potatoes. Make sure it’s fully heated before you put the potatoes in.
- Prepare Your Ingredients: Start by washing your potatoes thoroughly (no need to peel!). Then, chop them into roughly 1-inch cubes. Uniform sizing is important for even cooking, so try to make your cuts consistent. Next, chop your garlic into generously large pieces; this helps prevent burning during roasting. Remove the stems from your fresh thyme sprigs, leaving just the leaves.
- Season Generously: In a large mixing bowl, combine the potato pieces with the olive oil. Toss well to ensure every potato is lightly coated. Then, add your sea salt, ground black pepper, and the coarsely chopped garlic. Using your hands is often the best way to ensure everything is evenly coated and seasoned.
- Arrange on Baking Sheet: Line a large baking sheet with parchment paper or a silicone mat. This prevents sticking and makes for easier cleanup. Pour the seasoned potato mixture onto the prepared baking sheet and spread them out into a single layer. Crucially, avoid overcrowding the pan. Giving the potatoes space allows air to circulate, which is essential for crispiness. If your pan is too crowded, the potatoes will steam instead of roast, resulting in a soft texture. Sprinkle the fresh thyme leaves evenly over the potatoes.
- Add the Butter and Bake: Just before placing the baking sheet into the hot oven, pour the melted vegan butter evenly over the potatoes. This adds an extra layer of richness and helps with browning. Bake for 30-35 minutes, or until the potatoes are beautifully golden brown and fork-tender. Make sure to stir them midway through the baking time (around the 15-20 minute mark) to ensure even browning and crispiness on all sides.
- Serve and Savor: Once they’ve reached that perfect golden hue and crispy texture, remove the roasted garlic potatoes from the oven. Serve them immediately while they are hot and at their best. Enjoy the incredible aroma and flavors of your perfectly roasted, garlicky side dish!
Expert Tips for Guaranteed Success and Ultimate Crispiness
Achieving perfectly crispy, tender, and flavorful garlic roasted potatoes is simple with a few insider tricks. Here’s how to ensure your batch is always a showstopper:
- Choose Your Favorite Potatoes (But Some Are Better!): While nearly any potato can be roasted, certain varieties truly excel for this dish. My personal favorites are russet and Yukon gold potatoes, as they offer the best combination of starchy, fluffy interiors and crispy exteriors. Russets are fantastic for a very fluffy inside, while Yukon golds bring a natural buttery richness. Don’t hesitate to experiment! Sometimes, I even use sweet potatoes, and they are equally delicious with this same garlic and herb treatment, offering a delightful sweetness. Remember, you truly can’t go wrong with any potato recipe, can you?
- Embrace the Skin for Maximum Crispiness: For garlic roasted potatoes with an incredibly crispy exterior, resist the urge to peel them. The skin, when properly cleaned and roasted, becomes wonderfully thin and crackly, adding a fantastic textural contrast to the soft interior. Plus, it saves you time and adds extra nutrients! Just ensure you scrub them very well.
- Achieve Next-Level Crispiness with a Cold Soak: For an even crisper texture, a simple pre-soak can work wonders. After cutting your potatoes into cubes, place them in a bowl of cold water for up to 30 minutes. This process helps to draw out excess starch from the potatoes. Less starch means a drier surface, which translates directly to a crunchier roast. After soaking, drain them thoroughly and, most importantly, pat them completely dry with a clean kitchen towel before seasoning. Any residual moisture will lead to steaming instead of roasting.
- Don’t Overcrowd the Pan: This tip is non-negotiable for crispy potatoes. If you pile the potatoes too high on the baking sheet, they will steam rather than roast. Ensure there is plenty of space between each potato piece so that the hot air can circulate freely around them. If necessary, use two baking sheets to avoid overcrowding. This allows the moisture to evaporate and the potatoes to develop that perfect golden crust.
- Customize to Your Heart’s Content: This recipe provides a fantastic foundation, but it’s also incredibly versatile! Feel free to put your own unique spin on it. Consider adding a pinch of smoked paprika for a touch of warmth and color, or sprinkle with some homemade vegan Parmesan for an umami boost. Experiment with different herbs like fresh rosemary, oregano, or a blend of Italian herbs. A dash of onion powder or a pinch of red pepper flakes for a subtle kick can also elevate the flavor profile. The options are truly endless for making these potatoes uniquely yours!
- Don’t Skip the Vegan Butter Drizzle: While olive oil gets things started, that final drizzle of melted vegan butter before baking is a game-changer. It ensures a richer flavor, a more beautiful golden-brown color, and an even crispier finish. This step adds a luxurious touch that truly brings the divine flavor together.

The beauty of these garlic roasted potatoes lies in their incredible versatility. Serve them as a flavorful side with a fluffy tofu scramble, vegan breakfast burritos, or alongside a stack of savory pancakes. They’re a fantastic alternative to traditional hash browns.
- Light Lunches: For a lighter meal, these potatoes can be enjoyed alongside a fresh green salad with a tangy vinaigrette, or as a component in a power bowl with roasted vegetables and a protein source.
- As a Snack or Appetizer: Sometimes, these potatoes are so good, they can be enjoyed all on their own as a satisfying snack! Serve them with a side of vegan aioli or a creamy herb dip for an easy appetizer.
No matter what you choose to pair them with, these garlic roasted potatoes are guaranteed to add a burst of flavor and a comforting, satisfying touch to your meal.

How to Store and Reheat Leftover Garlic Roasted Potatoes
While these garlic roasted potatoes are best enjoyed fresh out of the oven, it’s totally possible to save any delicious leftovers for another meal. Proper storage and reheating will help maintain their flavor and texture as much as possible.
- Refrigeration: Allow any leftover garlic roasted potatoes to cool completely to room temperature before storing. Transfer them to an airtight container and refrigerate for up to 4 days. This ensures they remain fresh and safe to eat.
- Reheating for Best Texture: To bring back some of their original crispiness, reheating in an oven or air fryer is highly recommended.
- Oven: Spread the potatoes in a single layer on a baking sheet. Reheat in a 400ºF (200°C) oven for about 10-15 minutes, or until heated through and crisp again.
- Air Fryer: For an even quicker crisp, place potatoes in a single layer in your air fryer basket. Reheat at 375ºF (190°C) for 5-8 minutes, shaking the basket halfway through, until hot and crispy.
- Microwave: While convenient, reheating in the microwave is generally not recommended as it can make the potatoes soft and mealy, losing their coveted crispy texture. If you must use a microwave, heat in short bursts until just warmed through.
- Freezing Not Recommended: I generally do not recommend freezing this dish. Like many homemade potato recipes, roasted potatoes tend to develop a mealy, unappealing texture once frozen and then thawed. The cellular structure of the potatoes changes, resulting in a less desirable mouthfeel. It’s best to enjoy these within a few days of making them.

Notes
- My favorite kind of potatoes for roasting are russet potatoes and Yukon gold. You can use any kind though, even sweet potatoes!
- Leaving the skins on will give you an incredibly crispy exterior. Don’t peel them off.
- Remember to cut the garlic pieces into larger chunks to prevent them from burning; otherwise, they might become bitter.
- Don’t skip that vegan butter hit at the end. It really brings together a divine flavor and tastes incredible!
- You can customize these to your liking! Add some paprika, some vegan Parmesan, or different herbs – the options are endless!
- To store: Refrigerate leftover garlic roasted potatoes in an airtight container for up to 4 days. Reheat in a 400ºF oven, in the air fryer, or in the microwave. I don’t recommend freezing this dish; homemade potato recipes tend to have a mealy texture when they’re frozen.
