Ingredients

  • 1 ½ cups gluten-free oats, 120g
  • ½ cup uncooked quinoa, 86g
  • 1 tablespoon coconut oil, 13.05g
  • 2/3 cup natural peanut butter, 170g
  • 1/2 cup Wholesome Raw Unfiltered White Honey, 126g
  • ½ teaspoon sea salt to sprinkle on top
  • Dark Chocolate, for drizzling
  • Optional to add: chia seeds, almonds, shredded coconut

Instructions

  • Line an 8×8 baking pan with parchment paper, leaving an overhang on the sides for easy removal. Set aside.
  • In a large mixing bowl, combine the gluten-free oats, uncooked quinoa, and any optional add-ins like chia seeds or additional chopped nuts. Stir well to ensure an even distribution.
  • In a separate small microwave-safe bowl, combine the coconut oil, natural peanut butter, and Wholesome Raw Unfiltered White Honey. Microwave in 15-second intervals, stirring thoroughly after each interval, until the mixture is completely melted, smooth, and well combined. This usually takes about 30-45 seconds in total.
  • Pour the warm honey-peanut butter mixture over the dry oat and quinoa mixture. Using a sturdy spoon or spatula, stir all the ingredients together vigorously until everything is thoroughly coated and the mixture is thick and sticky, holding together when pressed.
  • Transfer the granola bar mixture into the prepared baking pan. Press it down very firmly and evenly across the bottom of the pan using your hands, the back of a spoon, or the bottom of a flat-bottomed mug. The firmer you press, the better the bars will hold together. If desired, sprinkle with extra nuts, seeds, or shredded coconut on top for added texture and flavor.
  • Place the baking pan in the refrigerator for at least 1 hour to allow the bars to firm up and harden completely. For best results and easier slicing, you can even leave them overnight.
  • While the bars are chilling, prepare the chocolate drizzle. In a separate microwave-safe bowl, melt about 2 tablespoons of dark chocolate chips or a few squares of your favorite dark chocolate. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. Transfer the melted chocolate to a small ziploc bag and snip off a tiny corner for easy drizzling.
  • Once the bars are firm, remove the baking pan from the fridge. Drizzle the melted dark chocolate generously over the entire slab of granola bars. Immediately sprinkle with the sea salt on top of the chocolate before it sets. Return the pan to the fridge for another 15 minutes to allow the chocolate to harden.
  • Remove the chilled bars from the fridge again. Use the parchment paper overhang to lift the entire slab out of the baking pan onto a cutting board. Cut the slab in half, then cut each half into 6 bars for a total of 12 perfectly sized granola bars. Serve immediately and enjoy! Store any leftover bars in an airtight container or a sealed ziploc bag in the refrigerator for up to a week.
