  • 1 cup coconut sugar
  • 1/2 cup coconut oil
  • 1/2 vanilla bean, or 1 teaspoon vanilla extract
  • 1/2 cup vegan coconut yogurt, or plain yogurt
  • 3/4 cup mashed bananas, very ripe bananas (black skin if possible)
  • GF certified oats, such as Bob’s Red Mill and chopped pecans, for topping (optional)
  • Optional: Chocolate chips or nuts

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a 9 x 5-inch loaf pan by greasing it thoroughly (with vegan butter or coconut oil) and lightly dusting it with gluten-free flour. Set aside.
  • In a medium-sized bowl, sift together the gluten-free flour mix, baking powder, baking soda, and sea salt. Whisk these dry ingredients well to ensure they are thoroughly combined and evenly distributed.
  • In the bowl of a stand mixer (or a large mixing bowl with a hand mixer), add the prepared flax eggs (or your chosen egg replacer), coconut sugar, and melted coconut oil. Mix these wet ingredients together on medium-low speed for approximately 2 minutes until light and creamy.
  • If using a vanilla bean, scrape the seeds and add them to the mixture. Alternatively, add 1 teaspoon of vanilla extract. Incorporate the vegan coconut yogurt and the mashed ripe bananas. Continue to mix everything together for another 2 minutes on medium-low speed, periodically stopping to scrape down the sides and bottom of the bowl to ensure all ingredients are perfectly combined.
  • Add half of the dry ingredients mixture to the wet ingredients. Mix on low speed for about 30 seconds, just until partially combined. Then, add the remaining dry ingredients mixture. Mix again for another 30 seconds, or until just combined and no streaks of dry flour remain. Be careful not to overmix.
  • Remove the bowl from the mixer. If you’re adding optional mix-ins like vegan chocolate chips or chopped nuts, gently fold them into the batter by hand with a spatula until they are evenly distributed throughout. The batter should be notably thick at this stage.
  • Carefully spoon the thick batter into your prepared banana bread pan. Use your spatula to gently smooth down the top surface of the batter. If desired, sprinkle some gluten-free oats and chopped pecans evenly over the top for a beautiful finish and added texture.
  • Bake the banana bread on the middle rack of your oven for approximately 60 minutes. The bread is done when a wooden skewer or toothpick inserted into the center comes out with a few moist crumbs attached. It should NOT come out completely clean. Begin checking for doneness around 50 minutes, as baking times can vary slightly depending on your specific oven.
  • Once baked, remove the pan from the oven and allow the banana bread to cool in the pan for 10 minutes. This resting period helps the loaf to firm up and prevents it from breaking. After 10 minutes, carefully invert the pan onto a wire rack, then gently flip the bread right side up onto the rack to cool completely.

  • TO MAKE BANANA BREAD MUFFINS: For a convenient individual treat, simply prepare the batter as directed. Instead of a loaf pan, pour the batter into a prepared muffin tin (lined with paper liners or greased). Bake for approximately 20-23 minutes, or until a toothpick inserted into the center of a muffin comes out with a few moist crumbs.
  • HOW TO STORE BANANA BREAD: After your banana bread has cooled completely, wrap the entire loaf tightly in plastic wrap to lock in moisture. For extra protection against air, place the wrapped loaf into a plastic zip-top bag and gently press out any excess air before sealing. Store at room temperature for up to 1 week. Please do not store it in the refrigerator, as the cold air can dry out the bread and negatively impact its wonderful soft texture.
  • HOW TO FREEZE BANANA BREAD: This recipe freezes beautifully! To freeze, follow the room temperature storage instructions (wrap tightly in plastic wrap, then place in an airtight freezer-safe bag or container). Store in the freezer for up to 2 months. When you’re ready to enjoy, simply remove the loaf (or individual slices) from the freezer and let it thaw on the kitchen counter at room temperature. For a quicker option, individual slices can be gently reheated from frozen in a toaster oven or microwave.
